Brayan Moncayo Gesha - Narino, Colombia

We are still caught off guard by the spectrum of flavor that exist in coffee.  It amazes us that a coffee can have a silky & buttery texture with floral & fruity notes.  It's so far from what we grew up thinking coffee could be and it's incredible.  That's exactly what we find in this Gesha lot from Brayan Moncayo.  Every sip is a whole new adventure and we're thrilled to have his coffee in our lineup. Brayan dedicates significant time and care to ensuring the quality of his coffee. He harvests only the ripest cherries, puts them in water to identify and remove floaters, and ferments the cherries for 48 hours before depulping. The coffee then undergoes an additional 72-hour fermentation, followed by a light wash and a slow drying process on raised beds that typically lasts two to three weeks.
