The outer leaves are pale green while the inner leaves have a yellowish hue. Boston lettuce has a delicate, mild flavor and a soft, buttery texture. It is a popular ingredient for salads and sandwiches. Boston lettuce is available year-round. Handling Tip Selection Boston lettuce leaves are loose with a uniform green color and not wilted. Leaves are clean, free of bruises and yellowing. Storage Boston lettuce should be stored as close to 32°F (0°C) as possible with a relative humidity of ninety-eight to a hundred percent and light mist. The typical shelf life is up to four weeks. High humidity is important to avoid wilting. Boston lettuce is sensitive to ethylene, a naturally occurring gas that regulates ripening. Boston lettuce should not be stored with high ethylene-producing products to extend shelf life and avoid russet spotting and leaf yellowing. Boston lettuce produces a low level of ethylene. Boston lettuce is not sensitive to chilling injury but is easily damaged by freezing.
