Quick Facts: ABV: 58.7–59.1% (batch dependent)  |  Origin: County Cork, Ireland  |  7-Year Age Statement  |  Distillery: Midleton Production & Heritage Blue Spot is produced at Midleton Distillery in County Cork, Ireland — one of the largest and most technically versatile distilleries in the world, operated by Irish Distillers (a subsidiary of Pernod Ricard). The Spot whiskey lineage traces back to the Mitchell & Son wine merchants of Dublin, who originally marked their aging casks with colored spots to denote maturation period. Blue Spot uses a traditional 50/50 mashbill of malted and unmalted barley, triple distilled through copper pot stills, then matured across three distinct cask types: ex-bourbon barrels, ex-sherry butts, and Portuguese Madeira casks. While the label carries a 7-year age statement reflecting the youngest component, the vatting includes whiskeys aged significantly longer — the Madeira-matured portion reaches up to 20 years old, lending unusual depth for an expression in this age-statement bracket. Tasting Notes Aroma: The nose opens with butterscotch, toffee, and tropical fruit — pineapple, kiwi, and green banana are prominent. Deeper layers reveal stewed apple, hazelnut praline, espresso, and burnt caramel, underpinned by building waves of cinnamon, white pepper, and a dusting of cocoa. Taste: At full cask strength, the palate arrives with a smooth but powerful mouthfeel. Tropical fruit mingles with baked apple and sugary plum skins, while pot still spices — clove oil, cracked black pepper, and nutmeg — assert themselves across the mid-palate. A current of toasted wood and coconut runs underneath, with the Madeira influence adding a dark, vinous richness. Finish: The finish is long and warming, appropriate for the proof, with lingering hazelnut, roasted almond, and red apple sweetness. Spice gradually fades into a subtle earthy barrel character and a final thread of caramel. How to Drink Blue Spot Neat with a few drops of water is the recommended primary serve. Water opens the whiskey considerably, taming the cask-strength intensity and unlocking its fruit-forward aromatics. At nearly 59% ABV, Blue Spot also holds its character exceptionally well in cocktails: try it in a Pot Still Sour, where its tropical fruit notes complement fresh citrus; a Hot Toddy, where the spice and Madeira depth amplify warming clove and honey elements; or an Irish Old Fashioned, where the cask strength delivers enough backbone to stand up to bitters and sugar without losing its pot still identity. How does Blue Spot compare to Green Spot? Green Spot is bottled at 40% ABV and aged primarily in ex-bourbon and ex-sherry casks, resulting in a lighter, more approachable character. Blue Spot brings significantly more intensity at cask strength and adds Madeira cask complexity, with components aged up to 20 years versus Green Spot's younger profile. Is Blue Spot good for sipping neat? Blue Spot is outstanding for neat sipping, though a few drops of water are recommended to open the full aromatic range given its 58.7–59.1% ABV. The cask strength bottling preserves nuances that would be lost at lower proof. Where is Blue Spot made? Blue Spot is distilled at Midleton Distillery in County Cork, Ireland, which is also home to brands such as Jameson, Redbreast, and the rest of the Spot whiskey range. The Spot series is produced in partnership with Mitchell & Son, the Dublin-based wine and spirits merchant whose cask-marking system inspired the brand's name. What foods pair well with Blue Spot? Dark chocolate truffles complement the cocoa and espresso notes; aged Comté or Gruyère cheese mirrors the nuttiness; pork belly with a fruit glaze plays off the tropical and Madeira character; spiced apple tart echoes the baked apple and cinnamon; and blue cheese pairs well with the whiskey's bold spice and sweet finish.
