Black Capped Cache

A marvelous semi-firm, washed rind cheese from Stony Pond Farm. These large, raw-milk wheels take their name from Black Capped Chickadees, and their practice of stashing seeds to sustain themselves throughout the winter. The cheesemakers at Stony Pond have a similar ritual, transforming rich autumn milk into hearty wheels of winter cheese! Black Capped Cache's buttery paste and gentle funk pairs well with pears, cornichons, and hungry friends. It's also a perfect texture for melting!
