Roasted LONG & slowly, the Hump Roastmakes a very flavorful & nutritious meal with a combination of muscle and connections that melt into nutritious collagen. During the great slaughter, bison were often harvested for this cut specifically. This cut is tough yet very flavorful with a collagen-rich broth. Not recommended to be prepared on a smoker or grill.
