The smaller leaves are more tender and have a sweeter flavor than mature spinach. It is a popular salad green that can be easily found in the market. Baby spinach is available year-round. Handling Tip Selection Baby spinach has a uniform green color with no signs of yellowing, sliminess, or decay. No foul odor. Storage Baby spinach should be stored at 32°F - 36°F (0°C - 2°C) with a relative humidity of ninety-five to a hundred percent and with light mist for loose packaging. The typical shelf life is ten to fourteen days. High humidity is important to avoid wilting. High temperature promotes deterioration and leaf breakdown. Baby spinach is highly sensitive to ethylene, a naturally occurring gas that regulates ripening. Baby spinach should not be stored with high ethylene-producing products to extend shelf life and avoid russet spotting and leaf yellowing. Baby spinach produces a very low level of ethylene. Baby spinach is not sensitive to chilling injury but is susceptible to freezing injury. The freezing point for baby spinach is 31°F (-0.5°C) should be avoided. Freezing injury symptoms include yellowing, dried out, and translucent leaves.
