Organic Baby Beets

About Norwich Baby Beets with Tops Tender young beets harvested early for sweetness, delicate texture, and vibrant greens. Offered with tops attached, these baby beets are prized by chefs for their versatility, visual appeal, and ability to be used from root to leaf. Available Varieties Available in Red, Gold, Candy Cane, Badger Flame, Forono (Cylindra), White, and Mixed assortments. What Are Baby Beets? Baby beets are harvested at an immature stage before the roots become overly dense or earthy. Their smaller size gives them a more refined texture and a naturally sweet flavor, while the attached greens remain tender enough to cook or serve raw. The roots and tops are both fully usable, making them ideal for kitchens looking to maximize utility and presentation. What Do They Taste Like? Sweet, clean, and less earthy than mature storage beets. Each variety brings subtle differences in flavor and appearance: Red — classic beet flavor with deep sweetness Gold — mild, buttery, and less earthy Candy Cane — striking concentric rings with balanced sweetness Badger Flame — elongated roots with bright orange and gold tones and a sweeter profile Forono (Cylindra) — elongated heirloom beet with smooth texture, deep sweetness, and excellent uniformity for slicing and roasting White — delicate and mild with very low earthiness Mixed — a colorful assortment selected for contrast and versatility How to Use Baby Beets Roast whole and serve warm or chilled Glaze with butter, citrus, vinegar, or stock reductions Slice raw thinly for crudo, salads, or carpaccio-style preparations Char or grill for smoky sweetness Use greens sautéed, wilted, or blended into sauces Pair with yogurt, fresh cheese, herbs, nuts, or stone fruit Because the roots are harvested young, they cook more quickly and maintain a tender interior without becoming fibrous. Why They’re Different These are field-grown specialty beet varieties selected for flavor, color, and culinary performance rather than storage durability. Harvested with tops intact and packed fresh, they are intended for kitchens where appearance and texture matter as much as flavor. The diversity of varieties allows for plating flexibility and seasonal presentations that go beyond standard commodity beets.
