Ayocote Arcoiris - Limited Edition

There is an ancient farming method still practiced by only a small number of family farms in Mexico: Milpa. Beans, corn, squash, and chiles, all planted together, all harvested by hand — the original regenerative agriculture, older than the Aztec Empire itself. It's how the Ayocote Arcoiris is grown, in the volcanic highlands of Puebla, the birthplace of the Ayocote bean. When our wildly popular Medianoche sold out, we went looking for what could possibly follow it. This is that bean: creamy, meaty, and built for a deep, inky broth so good it becomes the dish. No synthetic fertilizers, no chemicals, no glyphosate. Grown through our partnership with La Comandanta — a Mexican mission-based company dedicated to rescuing ancestral heirloom varieties at risk of disappearing — this is a rare, limited harvest. Once it's gone, it's gone. See below for cooking times and our serving suggestions. 1 lb in a 100% curbside recyclable standup pouch.
