ARUGULA (PREORDER)

8 X 5 oz clamshells Arugula aka "Roquette", "Salad Rocket", "Zhi-Ma-Cai", "Huo-Jian-Sheng-Cai", "芝麻菜", "火箭生菜" Arugula is a leafy green vegetable with an oak-like shape. It has a fresh, tart, bitter, and peppery flavor. Often used as a base for a salad, toppings for fresh-baked pizza, and pesto. Handling Tip Selection Arugula is a uniform bright green color with no signs of decay and yellowing. Storage Arugula should be stored at 32°F - 36°F (0°C - 2°C) with a relative humidity of ninety-five to a hundred percent and with mist for loose packaging. The typical shelf life is seven to ten days. Arugula is highly sensitive to ethylene, a naturally occurring gas that regulates ripening. Arugula should not be stored with high ethylene-producing products to extend shelf life and avoid yellowing. Arugula produces a very low level of ethylene. Arugula is not sensitive to chilling injury and should be stored as cold as possible without freezing.
