In the thistle family with artichokes, but grown for the stalk, not the flower bud. Can be braised and topped with cheese, put into soups and stews, or deep fried and is delicious every way. Can be grown as a perennial for about 6 years, up to 8 feet tall, starting harvest around 60 days. (blanching recommended) Open Pollinated.
