World Spice Ancho Chile

World Spice Ancho Chile: Traditional Dried Poblano Pepper for Authentic Mole & Sauces The World Spice Ancho Chile is a whole dried poblano pepper crafted for cooks who want authentic Mexican flavor without intense heat. As the dried form of the ripe green poblano, this variety delivers a naturally mild, sweet profile with rich undertones of dark fruit and roasted plum. Rather than delivering sharp spice, ancho chiles build deep, savory complexity that forms the backbone of traditional molé negro, adobos, and hearty slow-cooked stews. World Spice processes these pods at peak maturity before sun-drying them to preserve their distinctive earthy sweetness and subtle woodsmoke character. The flexible, wrinkled pods break easily for grinding into custom chili powder or steeping whole to infuse broths and salsas. Whether you are recreating century-old recipes or elevating everyday tomato-based sauces, this staple ingredient provides consistent color, aroma, and flavor layering in every batch. Home cooks expanding their regional Mexican cooking repertoire Backyard smokers seeking low-heat, high-flavor drying and wet rub foundations Sauce makers and recipe developers building signature spice blends FAQ How spicy are dried ancho chiles? Ancho chiles rank between 1,000 and 2,000 Scoville Heat Units, placing them in the very mild category. They provide gentle warmth and profound flavor density rather than aggressive heat, making them ideal for dishes where you want aromatic complexity without burning your palate. Do I need to remove the stems and seeds before using them? Standard practice involves snapping off the woody stem and gently fanning out the pod to shake loose the seeds. Removing seeds minimizes slight bitterness and gives you tighter control over the final thickness and spice level of your sauce or rub. What is the best way to store dried ancho chiles? Keep the pods in a sealed glass jar or heavy-duty zipper bag stored in a cool, dark pantry away from humidity. Properly protected from light and moisture, whole dried ancho chiles maintain their flexibility and robust flavor profile for 12 to 18 months.
