Alligator Jerky — Cajun Style

The one our retailers say moves fastest. Alligator and Cajun seasoning is not a novelty pairing — it's the way gator has been eaten in Louisiana for as long as people have been eating it. Why the pairing works Alligator is mild. That's the whole reason Cajun seasoning lands so hard on it — there's no competing flavor for the spice to fight. On beef, the same blend gets muddied by the meat. Here it comes through clean: cayenne, paprika, garlic, black pepper, with actual depth behind the heat rather than just burn. It's genuinely hot. Not punishing, but this isn't a mild jerky with a spicy label. Who it's for People who order the spicy version of everything. This will not disappoint you. Anyone bringing something to share. This is the one that gets passed around and argued about. Cajun food people. The seasoning is the real thing, not a heat gimmick. Why it's blended Like every exotic meat we carry, this is blended with beef and pork. There's a regulatory reason as well as a practical one — alligator isn't covered by mandatory USDA inspection the way beef and pork are, so blending is what brings the whole product under the federal stamp. It also gives the seasoning something to sit on; straight alligator is too lean to carry this much spice well.
