Origin & Producer This lot comes from producer Josiane Lima Bissoli at Sítio Bom Destino, a family-operated farm nestled at 900 meters in Afonso Cláudio, Espírito Santo. The here-elevated, breezy, and temperate-plays a quiet but powerful role in shaping the cup. The variety is Yellow Catucaí 2SL, known for its sweetness and clarity, and it was processed using a careful washed method that preserves the intrinsic character of the fruit. The result is traceable, ethically minded specialty coffee that captures the craft and dedication behind every harvest. Flavor Profile Black Tucano opens with a refined floral aroma-think delicate blossoms after rain. On the palate, a rounded honey sweetness meets the rustic charm of rapadura (raw sugar), while ripe peach notes unfold across a silky texture. The acidity is lively yet composed, and the finish lingers with caramelized warmth and a whisper of stone fruit. With an SCA score of 86+, this is a polished, expressive cup that remains approachable and versatile day after day. Roast & Versatility Roasted to a deft medium profile, this coffee is tuned for clarity and balance across brew methods. In filter brews, the washed process reveals florals and stone fruit with a honeyed backbone; in espresso, it yields a sweet, syrupy shot with raw sugar depth and a gentle peach brightness that plays beautifully in straight shots or milk drinks. Whether you prefer pour-over precision or the intensity of espresso, this coffee kit gives you everything you need to dial in with confidence. Suggested Brewing Recipes Pour-Over (V60 or Kalita): 20 g coffee to 320 g water (1:16). Water at 200°F (93°C). Bloom 40–45 seconds with 2x dose water, then two steady pours to finish around 2:45–3:00. Expect highlighted florals and peach with a clean finish. Batch Brew (Drip): 60 g coffee to 1 liter water (1:16–1:17). Medium grind. Target 4–6 minutes total. Balanced cup with honey sweetness and a gentle rapadura tone. AeroPress (Inverted): 16 g coffee to 230 g water at 198–200°F. 60-second steep, stir, 30-second press. Silky body, honey and raw sugar forward. Espresso: 18 g in, 36 g out in 27–30 seconds at 198–201°F. A sweet, textured shot with peach brightness; for milk, aim 1:2.2 to coax more caramelized sugar. Craft, Consistency, and the Washed Process The washed approach at Sítio Bom Destino emphasizes precision. Ripe cherries are depulped, fermented, and carefully washed to remove mucilage, then dried with attention to uniformity. This method pushes clarity to the forefront-florals read clean, sugars taste defined, and the finish stays transparent. We roast to preserve that intent, ensuring the final cup remains true to origin and variety, not overshadowed by roast character. The result is a specialty coffee that feels both elegant and quietly confident. Sustainability & Traceability Traceable to producer and plot, this lot exemplifies responsible sourcing: identifiable farm, variety, and process. By celebrating named origins and sharing specific details-like Yellow Catucaí 2SL at 900 meters-we support a more equitable, quality-driven supply chain where craftsmanship is recognized. Thoughtful agriculture, careful processing, and attentive roasting come together to minimize waste and maximize flavor, cup after cup. Who This Kit Is For If you’re new to brewing, this kit gives you a frictionless start: a stellar single-origin paired with brewing guides and flavor cues. If you’re a seasoned taster, you’ll appreciate the precision of a washed Brazilian rarity that showcases florals and stone fruit beyond the expected chocolate-and-nut profile. It’s also a thoughtful gift-refined enough for the enthusiast, welcoming enough for a curious friend. Freshness, Storage, and Grind For peak aromatics and symmetry in the cup, rest the coffee 5–14 days from roast date. Store sealed, away from heat, light, and moisture. Grind just before brewing with a quality burr grinder; start at a medium-fine setting for pour-over and calibrate by taste. If your cup runs fast and tastes sharp, tighten the grind slightly. If it runs slow and tastes flat or bitter, open it up a notch. Small adjustments reveal new layers-honey becomes richer, peach turns juicier, florals gain lift. The Experience in the Cup From the moment you open the bag, you’ll notice a fragrant bouquet that feels like spring in the cup-gentle florals, sun-warmed peaches, and a golden, coffee-sweet impression reminiscent of honey and raw sugar. The first sip lands softly, with a balanced acidity that keeps the profile lively, then resolves into a clean, lingering finish. It’s the kind of profile you can savor in quiet moments or share with friends who want to explore what a Brazilian single-origin can be when farm and roast are in harmony.
