Origin and Producer Behind every memorable cup is a place and a person. This lot comes from Sítio Bom Destino in Afonso Cláudio, a mountainous pocket of Espírito Santo known for clean, sweet coffee with elegant fruit character. At 900 meters, the Yellow Catucaí 2SL variety ripens slowly, allowing sugars to develop and aromatics to concentrate. Producer Josiane Lima Bissoli oversees meticulous harvest and selection, followed by a classic washed process that highlights sparkling clarity and a refined, structured sweetness. The result is a transparent expression of terroir-honest, layered, and remarkably drinkable. Taste the Profile: Floral, Honey, Rapadura, Peach On the nose, delicate floral aromatics lead, suggesting blossoms after rain. The first sip brings a silk-threaded honey sweetness, folding into the nostalgic depth of raw sugar (rapadura). As the cup cools, a lift of sun-warmed peach emerges, bright yet soft, carrying through a clean, refreshing finish. The medium roast keeps structure and sweetness in balance, preserving acidity without sharpness. It’s an 86+ SCA experience that’s at once accessible and quietly complex-equally pleasurable as a morning pour-over or a dialed-in espresso shot. Brew It Your Way Pour-Over (V60/Kalita) This washed single-origin excels as a filter brew, emphasizing clarity and nuance. Start with a 1:16 ratio (e.g., 22 g coffee to 350 g water). Use fresh, filtered water at 200–205°F (93–96°C). Grind medium-fine; aim for a 2:45–3:15 total brew time. Expect heightened floral aromatics, a honeyed sweetness, and a peach-toned finish. Adjust grind finer for more body and sweetness, or coarser for a brighter, lighter cup. This lot stays poised even with small tweaks, making it an inviting canvas for your daily ritual. Espresso As espresso, the medium roast offers balance and viscosity without sacrificing definition. Try 18 g in, 36–40 g out, in 27–32 seconds as a starting point. Look for a syrupy texture, rapadura-like depth, and a lingering peach lift in milk drinks. Adjust finer for more intensity and crema; coarser for a brighter, quicker shot. Whether you prefer a concise ristretto or a classic 1:2 shot, this coffee delivers a confident sweetness and a graceful finish. Craft, Roast, and Versatility The roast profile is tuned to spotlight the inherent strengths of Yellow Catucaí 2SL: radiant sweetness, silky mouthfeel, and a clear fruit line. In the cup, the washed process gives you a crystal lens on the origin-no muddiness, just clean, composed flavor. Brewed as a pour-over, you’ll taste a floral opening that resolves to honey and peach. Pulled as espresso, the rapadura note becomes more pronounced, bringing depth that holds beautifully in milk while staying articulate as straight shots. Sustainability and Care At the heart of great specialty coffee is stewardship-of land, harvest, and quality. With a fully traceable lot from producer to farm, this kit respects origin and celebrates the people who make remarkable coffee possible. By choosing a single-origin from Espírito Santo, you support farming practices that value precision picking and careful processing, ensuring quality that you can taste and provenance you can trust.
