Grown at 850 meters at Sítio Bom Destino by producer Lima Bassoli, this coffee comes from the verdant hills of Afonso Cláudio – Espírito Santo, Brazil. The region’s elevation and microclimate nurture the Catuaí 81 variety, known for its balanced sweetness and clarity. As a true single-origin expression, it channels place-soil, sun, and farmer care-into the cup, giving you a direct and honest taste of Brazil’s contemporary, fruit-forward profile. Craft & Process Black Tucano Coffee Roasters approaches this coffee with restraint and respect. A controlled fermented process was used at origin to unlock expressive red-fruit character while preserving cleanliness. At the roastery, a dialed-in medium roast balances caramelized depth with sparkling aromatics, ensuring the varietal and remain center stage. The result is a cup where berry brightness integrates elegantly with molasses and honey tones-no harsh edges, just clarity and sweetness in harmony. How to Brew This Coffee Kit Ground for filter methods and traditional coffeemakers, this lot thrives in pour-over, batch brew, and immersion formats. It’s forgiving enough for daily brewing yet detailed enough to reward careful technique. While its sweet spot is filter, adventurous home baristas may explore a fruit-forward espresso with tight yields and a finer grind. Quick Brewing Guide Pour-Over (V60/Kalita): 1:16 ratio (20g coffee to 320g water), 198–205°F water, total time 2:45–3:15. Expect a clean, juicy cup with strawberry and raspberry at the forefront. Chemex: 1:15 ratio for a rounder sweetness and refined clarity. Aim for 3:45–4:15 total brew time to highlight honey and molasses depth. Batch Brewer: Medium grind, 1:16–1:17 ratio. Use fresh, filtered water and pre-wet the filter to reduce paper taste. Look for a balanced, consistent cup. French Press: Coarser grind, 1:15 ratio, 4-minute steep. Press gently for a plush body with amplified sweetness. Exploratory Espresso: If you experiment, dose 18g for a 30–34g yield in 26–30 seconds to capture jammy berry notes. Expect a vibrant, modern shot. Pro tip: Use fresh, clean water and aim for a TDS around 100–150 ppm. Subtle water adjustments can bring out more berry brightness or mellow sweetness, depending on your preference.
