6" Deli - Maker's Mark: Raffir "Arcus" No. 4

Every Raffir panel starts the same way — milled to shape on our machines, the brass mesh and black composite fusing into a pattern that only reveals itself once it's cut. This one broke like a storm's leading edge across the handle — Arcus, we call it, after the shelf cloud that arrives just ahead of the weather. From there, one knife maker takes over — fitting the handle, hand-finishing the choil and spine, and sharpening the blade before it ever leaves Victor, Idaho. No assembly line. No one making the same cut a thousand times a day. The blade hasn't changed. CPM S35VN particle metallurgy, thin and nimble enough for the thinner, more maneuverable cuts prep kitchens and delis have relied on for years — flexible where it needs to be, precise everywhere else. Same knife your kitchen already trusts. A handle that exists exactly once.
