The History Behind This Blade Kiritsuke and Bunka knives originated in Japan as precision tools for professional kitchen work. Damascus steel forging gave Japanese bladesmiths a way to build hardness and flexibility into a single blade. Olive wood and rosewood have long been prized handle materials for their density, grip comfort, and natural beauty. At JW Steel Crafts, these traditions come together — each blade forged by hand and fitted with care. Blade Performance Each blade is forged from layered Damascus steel. The wood-grain fire pattern flows horizontally across the full blade length, structured, deep, and clearly visible from tip to spine. This forging method builds grain strength and sharp edge retention directly into the steel. Thin tapered edges cut through proteins, vegetables, and herbs with precise control and low resistance. Blades hold their edge well between sharpening sessions. Handle Construction Each handle uses two materials: light olive wood and a dark rosewood collar at the blade junction. The rosewood collar acts as a natural bolster. No metal bolster is used; the wood-to-wood transition gives a clean, artisan-made finish. The grip sits balanced and comfortable in hand. Full tang runs the complete blade length through the handle for full structural strength and stability.
