A gentle peach note rounds the profile with stone-fruit juiciness, while the finish is clean, polished, and comforting. Tasting Notes: Floral, Honey, Raw Sugar (Rapadura), Peach Mouthfeel: Silky and balanced; medium body with a soft, rounded texture Finish: Clean and lingering with a light, nectar-like sweetness Roast and Brewing Versatility Designed for flexibility, the medium roast is tuned to shine in both filter and espresso extractions. As a pour-over, you’ll find clarity and aromatic lift; as espresso, you’ll discover deeper sweetness and gentle fruit tones without losing definition. This is a coffee kit made for exploration-consistent enough for everyday brewing yet nuanced enough for weekends spent dialing in. Roast: Medium (ideal for filter and espresso) SCA Score: 86+ points Process: Washed for clarity and cleanliness Origin Details & Craft Provenance matters in specialty coffee, and this lot delivers a clear sense of place. Producer: Josiane Lima Bissoli Farm: Sítio Bom Destino Origin: Afonso Cláudio – Espírito Santo, Brazil Altitude: 900 meters Variety: Yellow Catucaí 2SL Type: 100% Arabica The washed process, meticulously executed, removes the fruit before drying, preserving the seed’s inherent character. The result is a cup that’s pristine and articulate-florals that feel refined, sweetness that reads like spun honey, and fruit that’s present but never pushy. It’s a textural and aromatic signature that rewards attention. Sourcing Ethics and Quality This single-origin lot reflects a straightforward approach to quality and sustainability: careful picking, attentive processing, and responsible farm practices that respect both land and community. By working with producers like Josiane Lima Bissoli, we support craftsmanship at the source-where soil, variety, and method intersect. The quality is evident in the cup’s transparency and repeatable performance across brew methods. Brew Guide: Get the Most from Your Coffee Kit Every home setup is unique. Use the following as a starting point, then adjust grind, dose, and time to taste. This coffee kit is designed to help you find your sweet spot quickly. Pour-Over (V60, Kalita, or Similar) Ratio: 1:16 (20 g coffee to 320 g water) Grind: Medium-fine (granulated sugar texture) Water Temp: 200–205°F (93–96°C) Total Time: 2:45–3:15 Method: Rinse filter. Add grounds and bloom with 40 g water for 35–45 seconds. Pour in steady pulses to 320 g by 2:00–2:15. Aim for a flat bed and even drawdown. Expect elevated florals and a nectar-like peach sweetness with a clean, honeyed finish. Espresso Ratio: 1:2 Starting Point: 18 g in, 36 g out in 28–32 seconds Grind: Fine, dial as needed Method: Pre-infuse if your machine allows. The shot should present raw sugar sweetness up front with a subtle stone-fruit lift. If sour, grind finer or increase output slightly; if bitter or hollow, coarsen grind or shorten shot. For milk drinks, the honey and rapadura notes translate beautifully into a caramel-like latte profile without overwhelming the cup. Texture, Aroma, and Balance We roast Black Tucano to preserve the aromatic line-floral first, then honeyed, with peach rounding the mid-palate. The mouthfeel is silk-forward rather than heavy, making it equally compelling as a morning pour-over or an afternoon espresso. The sweetness is buoyant, the acidity is refined, and the aftertaste is tidy and long. Freshness and Storage Degassing: Allow 5–10 days post-roast for peak clarity in filter brews; 7–14 days for espresso. Storage: Keep sealed, cool, and away from light and humidity. Avoid the fridge or freezer after opening. Grind Fresh: For the most expressive aromatics and sweetness, grind just before brewing.
