White tea is really a subclass of green tea, however, due to its recent acclaim, it has been given a class of its own.  The major distinction is that white tea is not mechanically processed.  Buds and select leaves are harvested and merely air dried. HOT TEA BREWING: Use 1-2 tsp of tea per 10 fluid ounces of water Use water that is 180 F/82 C Steeped 1-3 minutes Repeat steeping up to 3 times Iced Tea Preparation Recommendations: AMOUNT TO USE: To make 1 L/1 QT, put 6 slightly heaping teaspoons of loose tea into a teapot.
